20 Best Baked Rhubarb Recipes for Your Summertime Harvest
Whenever the weather starts to warm up, one of the first things I look forward to is fresh rhubarb, ready to harvest. Before we moved to our current home, I had actually never harvested or baked with rhubarb. Sure, I had the occasional strawberry rhubarb pie from the store. But I had never picked rhubarb from the plant or baked with it at all.
That all changed when we bought property and moved North. Whoever lived in our house before us must have loved rhubarb because they left SO MANY rhubarb plants! And well-established ones too. The first summer we lived here, I was blown away by how much rhubarb was already growing right in my backyard. So, starting that summer and every summer since, I became a rhubarb baking machine – and loved every second of it!
Once a rhubarb plant is well-established, it grows exponentially each year. Meaning that, if you’re lucky, you will end up with a whole lot of rhubarb. If you have ever gotten stumped on what to make with all of your rhubarb or just want to try something new, this post is for you!
